Dear Friends and Family,

I’m in South Jordan, Utah.   Today is my nephew, Caleb’s, 32nd birthday and my grand-nephew, Dominic’s 19th birthday.

Last Monday afternoon I made a large (18x13) cherry cheesecake and a double Ritz Cheese Ball for Empty Nester’s FHE.  Then it was time to start cleaning.  I did the kitchen/dining room, the family room, three of the bathrooms and all the dusting.  Bob did all the tile floors and vacuumed the carpets and cleaned the fish aquarium.  The house was presentable.  Then I sat and looked at my “Su Bell’s 60th Birthday Celebration” book.  That was such a memorable week and I am so thankful that we all took so many pictures and that Stephenie had the idea to put it in a book and that Dorias helped her.  I have good kids.  Then the doorbell started ringing.  We had 8 people come to Empty Nester’s FHE: Don & Trish Ellestad, Clay & Doris Riley, Jack & Judy Sparks, Marilyn Gay and Gail Inman.  Bob gave the lesson and then we had refreshments.  The last of them left a little after 9.  Our missionaries then came in and helped eat left over refreshments.  It got up to 98° that day. Several wanted my recipe for the cheese ball so here it is:

RITZ CHEESE BALL—Dorias Marie Bell Swensen

2 pkgs. Cream Cheese
1 jar (2.25 oz) Armour Sliced Dried Beef OR 1 pkg. Buddig Turkey or Ham slices
OR ½ pound of very thin sliced Corned Beef from the deli.
A Bunch of Scallions (green onions)

Chop up meat slices and scallions.  Mix together with Cream Cheese.  Form a ball or put in a pretty bowl.  Chill for several hours.  Serve with Ritz Crackers

Tuesday was very laid back day.   I had been sick during the night so didn’t feel like doing much.  I just kept Bob company.  Then it hit me again in the afternoon.  I took a nice long nap until I needed to go up to the Church to babysit Bob while he had an interview.  While there, I got a call from my doctor’s office with the results of my lab work the week before.  My thyroid is out of whack so they need to increase my dosage.  I was so excited.  Maybe that will help my body thermostat regulate and my tiredness all the time go away.  Then I stayed for our Relief Society Meeting.  It was very enjoyable.  The Rose family gave an account of their survival trek in the Ouachita Mountains in Arkansas.  Cindy just about died—she is NOT a camper nor hiker nor anything else.  She wanted to go to the Bahamas for their vacation.  But she made it.  When I got home, I emptied all the house trashes and took the whole thing down to the street.  The missionaries got home shortly thereafter so we visited until bedtime.  When Bob got home, he said that Robbie had called him.  The fires were getting closer to Mineral Wells and they were getting lots of ash fallout.  They were evacuating the town of Palo Pinto. 

Wednesday was Megan’s 1st birthday and my last temple day until May 11.   The temple will be closing from today until May 9 for its semi-annual major cleaning and maintenance.  Marsha and I had a wonderful day at the temple.  Afterwards, Bob met us at Applebee’s in Weatherford for supper. When I got home, I worked on my computer a little and then visited with my missionaries.  I went to bed shortly after Bob got home.

I got up Thursday morning, went to breakfast with just Trish at IHOP.  From there I went and got my nails done, went to the post office, the cleaners, and to Walgreens.  When I got home, I filled my pill boxes with three weeks of pills and then started packing.  I’ve got it down to an art so it only took me a short while.  Then I sat around and waited until it was time for Bob to take me to DFW on his way to SMU.  I read on my Kindle while waiting for my flight to Utah.  The flight was uneventful.  Wendy (my niece) picked me up at the airport and took me to Grandma’s house.  I was really tired so went to bed shortly thereafter.

Friday morning I got up and got ready to go to my niece, Lindsay’s, graduation from BYU.  Wendy and Kerri (another niece) picked up Grandma and me.  Steve (Bob’s brother) and his family were saving us seats at the Marriott Center.  After the graduation, we went to PF Chang’s for a very late lunch.  Shortly after we got home, Grandma (Bob’s mom) and I went to pick up some prescriptions and do a little grocery shopping.  And then a little later we went to Walmart so I could buy me an iHome for my iPhone so I could listen to Pandora.  When we got home, Grandma finished packing.  I read on my Kindle until I got too sleepy and then went to bed.

Wendy picked Grandma up at 2am Saturday morning to take her to the Amtrak Station.  I went and got in Grandma’s bed.  I had orders to sleep with Lucy while Grandma was gone which I didn’t mind.  Lucy is a Poodle that I’ll be babysitting for the next couple weeks while Grandma is gone.  I got up around 8.   Lucy did not want me to pick her up to get her off the bed—she’s too fat to jump.  Finally I got her off and got her to go outside to do her business.  Later Cookie called.  She is in Arizona visiting Heather (another niece).  She’ll be up here on Thursday to keep me company until Grandma gets home.  After I got off the phone with Cookie, I read on my book some more.  I finished “Extras” and then started the book called “Unbroken: A World War II Story of Survival, Resilience, and Redemption” by Laura Hillenbrand.  It is the story of Louis Zamperini’s life.  I read on it until time for bed.  Lucy did not eat all day long until almost bedtime.  I think she’s going to lose weight while I’m watching her—she needs to.

I got up Easter Morning and went over to Wendy’s house for Easter breakfast.  She made Marjorie’s Creamed Eggs out of the hard boiled and colored Easter Eggs.  (Marjorie was Steve’s first wife and Nikki, Wendy, Kerri, & Glen’s mom.)  We had a nice visit.  Later, I came on back to Grandma’s.  I didn’t know when their Church started so I didn’t go.  Naughty me.  I texted with Bonnie and Stephenie and then laid down to take a nap.  Bob called me shortly thereafter.  He was fixin to make Easter dinner for Charles’ family, Michael’s family, and Dan’s family.  Dan was still in the oil field up in North Dakota, but the rest of his family was coming over.  I went back to sleep when I got off the phone.  Soon after I got up, I got a call from Jared Payne.  His wife had invited me over for Easter dinner so he was just checking up on me.  I got ready and left.  They live in Pleasant Grove in a nice home.  They have a great dog named Buddy.  He is Cocker Spaniel/full size Poodle.  Jared fixed a wonderful Easter dinner—he loves to cook.  We visited a couple hours before and an hour or so afterwards.  When I got home, Lucy was expecting Grandma.  I’m sure she will get better in a few days.  I read on my book until I went to bed.

The Texas Forest Service reports the Possum Kingdom Complex is 50 percent contained Sunday after burning 166 homes and two churches and 200 square miles of grass and woodland 70 miles west of Fort Worth.

Today is Monday and I would usually be having breakfast at IHOP right about now.  Dan got home from North Dakota last night.  They had a pretty violent thunderstorm at home last night.  My phone kept going off with Thunderstorm Warnings so I shut it off.  I hope we got enough rain to help the firefighters.  AND I hope that the lightening didn’t start new fires.  It is pretty here in Utah today.  Lucy is still looking for her mommy.

Dear Friends and Family,

I can’t believe April is already half over!  Last Monday afternoon I made a cherry pie, an apple pie, and a lemon meringue pie for Empty Nester’s FHE.  It had been years since I’d made meringue, but it worked.  While they were cooking, I mended two shirts and a pair of slacks for Elder Stanworth.  Trish called and wanted me to go to supper with her and Marilyn at Mongolian Grill.  I didn’t really want to go because I didn’t feel great and I wasn’t really hungry, and I had to get the house cleaned for Empty Nester’s FHE.  She talked me into it.  I didn’t eat much and just got to feeling more and more tired.  We decided to cancel FHE.  I went home and went straight to bed—I didn’t even get undressed.  I slept for 13 hours.

I felt better when I got up on Tuesday.  Trish wanted me to go to breakfast so I got cleaned up and went.  We stayed and visited until after 11 and then Marilyn, Trish, and I went up to the nursing home to see Charlene Pope.  She had her new knee put in on April 7 and was doing so much better.  We stayed until 2 visiting with her.  Sugar was sure glad to see me when I got home.  Jorge was working on the yard.  I read on my book for about an hour and then Brian Payne came over with his daughter, Faye, to visit.  I read a little bit more and then got ready to take Michael to Texas de Brazil in Fort Worth for his 32nd birthday.  (Karen and Megan were still in Indiana).  We had an enjoyable evening together.  I went to bed shortly after I got home—I was totally exhausted again.

I was still really tired when I got up Wednesday morning.  I don’t think I would have gotten up if I hadn’t had to go to the temple which I love to do.  I picked up Marsha and we had a wonderful drive and a good day at the temple.  Trish texted me and wanted to meet us afterwards for dinner.  We went to the Olive Garden here in Weatherford.  We had a really nice visit.  Marilyn went also.  Afterwards I came home, read on my “Pretties” book and then went to bed a little after 10 when the missionaries went to bed.  My great nephew, Devon Phillips, entered the MTC that day.  He is going to the Philippians.   I am so proud of him.  He is Cookie’s second grandson to go on a mission.

Joan Wendt (Robbie’s mother-in-law) woke me up a little after 9 on Thursday to tell me that Emma had broken her arm at the Church on Wednesday evening and had had surgery.  It is a good thing that Robbie works for an orthopedic surgeon.  Buck took care of everything—remember Robbie & Beth were on a cruise.  I talked to Buck yesterday and he said that Emma had a pretty bad break.  Her little arm was at a 40° angle and it broke both bones.  Her arm was like Harry Potter’s when the bone was removed—just floppy.  I talked to Robbie last evening.  They will x-ray her again later in the week to see if the bones have slipped.  If so, they will have to go back in and put a rod in her arm.
I was really tired again on Thursday—could barely function.  I did put a big pot of Chicken Tortilla Soup on for the missionaries and finished reading “Pretties” and started reading “Specials”.  I really had trouble concentrating though.  Bob did call me from England.  I also talked to Bonnie, Stephenie, and Dorias during the afternoon.  AND the missionaries washed all the Oak pollen off of my car that I got while in Boerne last week.  I was so tired that I decided to go to bed at 8 that evening.

I got up at 7 Friday morning—still tired.  I went to breakfast with the gang at IHOP.  When I got home, I did the laundry and hemmed a pair of pants for Elder Stanworth.  Then the power went out.  It was out for over four hours due to the 50+mph winds.  I heard that a wildfire was blazing near Possum Kingdom Lake in Palo Pinto County.  Bob got in around 4.  He said it was an interesting landing with all the wind.  He had an enjoyable trip, but was glad to be home.  The hummingbirds finally made it back—about a month late.  I finished my book “Specials” that evening.  I talked to Dorias a few times during the day.

Saturday morning the air was full of smoke from the fires raging in the next county over.  Bob and I went for a ride then came home.  It was too smoky to see anything.  Bob worked on our income taxes all day long.   I did the ward bulletin and some other stuff on my computer.  I took a nap, started the book “Extras” which is part of the “Uglies” series.  I didn’t do much at all during the day.  I did help Bob find stuff for our income taxes. This should have been done in February!  I read on “Extras” until I went to bed.

I got up yesterday morning and got a large ham ready to cook.  Then I got ready to go to Church.  I put the ham in the oven at Church and then ran off the bulletin. Boy our meetings were good.  Afterwards we had our monthly Linger Longer Potluck Dinner.  I got a text from Charles.  He said that they had falling ash at their Chapel in Graham.  The fires are really bad and the wind was up again on Sunday.  Bob came home for a few minutes and then left again.  Gerin Wilde came over to see me.  He should be able to go back on his mission on May 9.  His ankle is healing nicely.  I took a nap after he left and then talked to Dorias, Bonnie, and Robbie.  It was after 10 when Bob got home.  I had been visiting with my missionaries.

This morning the wind was up again.  Charles texted me that his school was closed due to all the evacuations from the fires.  I went to breakfast with the gang and left Bob at home.  Afterwards I went to Pack n Mail, the bank, Walgreens, the cleaners, and finally to Walmart.  When I got home, Bob had gone to a dermatology appointment in Fort Worth.  I did my Monday stuff on the computer.  Now I’ll get this off and start cleaning the house and making a treat for Empty Nester’s FHE tonight.

Dear Friends and Family,

Last Monday evening we went to Empty Nester’s FHE over at Trish’s house.  We had a potluck dinner and then they sang Happy Birthday to me.  Trish gave me a pretty Tex-Mex Geranium and Marilyn gave me a cute card.  I brought the leftover birthday cake home with me for the missionaries to eat.

Tuesday Bob got up again and went and taught Seminary.  We have about 25 kids coming from Hudson Oaks Ward, Mineral Wells Branch, and our ward.  I got up when he got home and got ready to go to Breakfast with the Girls at IHOP.  Only three others came besides Trish, Marilyn, Dan & Tonia and the two kids.  They sat at a table next to ours.  When we were almost done eating, the waitresses brought me a birthday sundae and sang Happy Birthday to me.  I have some good friends.  On the way home, I stopped at the Church and did my VT report, printed out the route changes, and the supervisors’ lists.  When I got home, I got all that ready and mailed off.  Then I read a little before Bob and I left to go to our annual doctor visit.  We both passed.  When we got home, Bob got ready to go to SMU to record this week’s lesson since he’s in England.   I left to run some errands—got my car inspected, went to the bank, got my oil changed and ate supper while that was being done, and went and got my hair cut.  When I got home, I did some stuff on my computer and then read on “Uglies”.  While doing that, Jim brought over a birthday cake for me to take to the temple from Marsha.  And I visited with the missionaries for a while when they got home.

Wednesday was my 62nd birthday.  It was also my twin brother’s birthday, one of my granddaughter’s (Eden) 6th birthday, and my Cousin Diana’s birthday.  Stephenie got me a really cute cookbook called “Our Best Bites”.  Sharon called me Wednesday morning to tell me that she was sick.  Marsha had a doctor’s appointment so wouldn’t be going.  That meant that I had to drive over to Dallas all by myself!  That also meant that I had to go a different way than usual because I couldn’t use the HOV lanes.  I made it ok to and from, but didn’t like it and it took twice as long to get home as usual.  When I got back to Weatherford, I stopped by the Church.  Bob wasn’t ready to go yet so I ran over to Walmart to get some envelopes and then went on home.  He got home a little later.  We went to Logan’s for dinner together.  I got LOTS of “Happy Birthdays” on Facebook, in texts, and calls from most of my kids and a few friends.  It was a good day.

Thursday morning I got up, packed, and went to QuestLabs to get some blood work done, but they were too busy so I left and met Trish and the gang at IHOP for breakfast.  Dan only stayed a few minutes.  He was on his way to catch a plane to go to work up in North Dakota—I think.  After I left there, I got gas ($3.56 a gallon) then drove to Mineral Wells to pick up my granddaughter, Lauren.  From there we drove to Boerne.  After Rebecca got home from school we (Dorias, Rebecca, Lauren, and I) drove to Kerrville to start the Bluebonnet Patchwork Trail Quilt Shop Hop.  This is my third year going.  From Kerrville we drove to Leon Springs to another quilt shop.  Afterwards we went out to dinner at Papa Nachos and then came back to Boerne.  I went to bed shortly thereafter.

Friday Rebecca skipped school.  We left the house around 8:30.  We went to a quilt shop in Castroville and three shops in San Antonio.  Then we headed back to Boerne to pick up the twins from school.  Mark came home from work early so that we could go back to San Antonio to one shop and then to New Braunfels to another shop.  Dorias had pre-registered us for a hotel in San Marcos so we went out to eat at Red Robin and then to our hotel.  We didn’t even turn on the TV, but went straight to bed. 

Saturday morning we ate at the hotel and then hit the road.  We went to four shops in the Austin area (Buda, Lakeway, Austin and Cedar Park) to finish out our Bluebonnet Patchwork Trail Quilt Shop Hop.  We went a total of 510 miles and had a lot of fun and learned a few new techniques.  We also spent a lot of money, but oh well, it is just once a year.  I was exhausted when we got back to Boerne.  Bob called me.  He was fixin to take off at DFW for London.  He will be home on Friday.   Dorias helped Lauren to make a pillow case that we were shown in one of the stores.  Lauren did all the work.  It turned out really cute.  Afterwards, they got ready to go to a Utah Jazz vs San Antonio Spurs game.  Mark was able to get six box seats.  I gladly stayed home and watched the twins.  I finished “Uglies” while the boys played outside.  Then I started “Pretties” which is the second book in the Uglies Series.  At 8 I put the chickens to bed and then had the boys get ready for bed and pick up the game room.  I read a little more and then went to bed shortly after the boys were asleep.  The rest of them didn’t get home from the game until around 1.

Yesterday morning Dorias & Mark and the twins went to Church in Fredericksburg.  Mark is the High Councilman for that Branch.  Lauren and I packed up and left around 11.  Matthew and Rebecca later went to their ward there in Boerne.  I dropped Lauren off at her house in Mineral Wells.  When we got there, Beth’s parents were at Lauren’s house watching the other three kids.  Robbie and Beth had gone on another cruise.  If you ever want to go on a road trip with Lauren, don’t count on her talking to keep you awake—she is NOT a talker, but she is still fun to have along.  I got home to Weatherford shortly before 5.  I had gone a total of 1,074 miles since I left on Thursday.  I worked on my computer (I couldn’t get on the Internet at Dorias’ house.)  And then read.  Around 9:30 a violent storm hit—we were under a tornado warning.  We had up to 80mph winds.  Then around midnight another storm came through with LOTS of wind, rain and lightening.  Consequently, I didn’t sleep too well.

This morning it was pretty and sunny, but cooler.  It had been up to 94 on Sunday.  I don’t think it will get that warm today.  Bob called me from England this morning at 5.  Later, when I got up, Jorge was here working on the flower beds.  I got dressed and went into town, got my blood drawn at QuestLabs, stopped at the post office to mail a letter, and then went to IHOP.  I didn’t eat—just visited with everyone.  On the way home, I did some shopping at Walmart and got gas for the lawnmower—$36.50 to mow the lawn!  I did my regular Monday stuff on the computer and then got to work cleaning the house and making pies for Empty Nester’s FHE which will be at our house tonight.  Don’t know what we will do about a lesson, but we’ll have fun visiting.

Dear Friends and Family,

I forgot to tell the most important thing in last week’s letter—Eric passed his second out of four CPA tests!  We are so proud of him.  He’ll take the third one at the end of May.

Last Monday I read on “The Jungle” by Clive Cussler until I got too sleepy, so I took a nap.  When I got up, I had four missionaries here.  The two Spanish speaking missionaries had come over.  They were playing pool and ping pong.  I continued to read on my Kindle.  Later that evening my two missionaries came in and visited a while before we all went to bed.

Trish woke me up to go to breakfast with her and Dan & Tonia and two of their kids.  We had lunch for breakfast.  The bluebonnets are starting to bloom along the freeway between Tin Top and Bethel roads.  We won’t have many this year due to lack of rain.  I stopped by Walmart on my way home and bought stuff for Chicken Tortilla Soup and then came home and made it for supper.

Chicken Tortilla Soup
4 regular or 2 large cans diced RoTel
1 can RoTel chili base
2 cans Chopped Green Chili Peppers
2 large cans crushed or diced Tomatoes
1 or 2 cans Black Beans
1 can Corn
5 cooked and diced Chicken breasts
1 diced large Onion

          Add everything to a BIG pot and simmer.  Don’t drain any of the cans.  Serve with a dollop of sour cream (optional) or a slice of Avocado (optional) or shredded cheddar cheese (optional) and with Tortilla Chips (optional).
         
When the missionaries came home for lunch on Tuesday, there were three of them.    We had a tag-a-long for about four days due to his companion going to a large training meeting for four days in Hurst.  He is usually in Granbury and has been to our house before.  He is Elder Campbell from Hemet, California.  Anyway, I read on my book until I was sleepy, took a nap, and then read until time for supper.  We all ate, I cleaned up the kitchen, and then I finished reading my book.  Wow!  It was good.  I’m going to have to read more Clive Cussler books.  I read “Sahara” a couple years ago and really liked it also.  Then I vacuumed all the tile floors.  When I finished, I started reading “Scumble” by Ingrid Law.  I went to bed around 8:30.

Even though I went to bed early on Tuesday, it was sure hard to get up on Wednesday.  But I did—it was temple day.  Bob called me to let me know that he would be home later that day.  He had had a great visit with Grandma and had gotten a lot accomplished.  I picked up Sharon and Marsha.  We had a very enlightening day at the temple.  We ate at Logan’s Steakhouse again this week when we got back to Weatherford.  Bob wasn’t home when I got home, but he had been.  I wanted to go to bed because I was so tired, but it was just too early.  Bob got home around 9.  We stayed up talking until after 11.

I slept in on Thursday morning then messed around on my computer while Bob worked in his office.  I talked with Dorias, Stephenie, and Bonnie.  Later that afternoon we had fresh asparagus from our garden.  Bob left a little later to drive to Dallas to teach his SMU class and I read on my Kindle and watered the orchard and the raised beds.  Dan & Tonia and the kids came over that evening and brought me updated pictures of the kids.  It had been a while!  We had a nice visit.  I read on my book “Scumbled” until I finished it at 1:30 that next morning.  Then I discovered that it was actually the second book and that I should have read “Savvy” first.  Oh, well.  I’m reading it now.  During the day, the cold front that had plagued us for four days—moved on.

We slept in on April Fool’s Day.  You cannot believe what all that Stephenie and Dorias did to their kids.  I thought about doing some of it to my missionaries, but decided against it. Check out their blogs at www.esfamily.blogspot.com and www.mdswensen.blogspot.com.  I watered some more outside.  That took most of the day.  In the meantime, I read in my Kindle on “Savvy”.  Boy it would have been nice to have read that first instead of reading the second book first.  It would have made a lot more sense.  I did take a break while Bob and I went grocery shopping.  When we got home, I fixed supper for the four missionaries and us.  Elder Berghout and Elder Stanworth cleaned up the kitchen for me afterwards.  They are such good kids.  I finished “Savvy” around 11:30 and then went to bed. 

Bob got up way before me and left to go teach his SMU class on Saturday.  I got up at 8.  I met Charles, Amber & Sadie at a car fixin place on North Main then I took them to breakfast with me.  We met Trish, Marilyn, and Dan & Tonia and their four kids at IHOP.  Afterwards we went out to Dan’s new house so that Charles & Amber could see it.  They should be sheet rocking it this week.  We visited with Trish a little and then came on home.  We watched “Tangled” and then I let Charles take my car to go pick up Amber’s car.  Her a/c hadn’t been working—it ended up just being a filter that needed replaced.  We watched the second session of General Conference.  I really liked Boyd K. Packard’s talk. Michael came over at the end of that session.  Then we all went to Logan’s Steakhouse for supper.  Bob met us there.  Afterwards, we picked up Katie & Madison at Dan’s old house and then came on home.  Bob, Michael & Charles met Dan & Robbie at the Stake Center for the General Priesthood Meeting.  Amber went shopping and I stayed home and watched Sadie, Katie and Madison.  There wasn’t much to do to watch them—just listen to if one of them got hurt.  They play really well together.  I started reading a book on my Kindle called “Uglies” by Scott Westerfeld and Rodrigo Corral.  Dorias suggested it.  Amber got home around 8:30.  Bob and the four boys went to Braum’s after Priesthood Meeting for ice cream—a tradition in our family.  When they got home, Charles, Amber and Sadie went home back to Jacksboro.  They dropped Katie and Madison off at Dan’s house on the way.  Michael left a little later to go back home to Benbrook.  Karen and Megan are in Indiana for a few weeks while Karen takes care of her Grandma while her parents are on vacation.

Yesterday we watched both sessions of General Conference at home.  It was a really good conference.  I talked to Bonnie and Robbie and text talked to Stephenie and Cookie.  It was up to 91 here, but there was snow on the ground in SLC.  Tyler Payne came over to visit with Bob, but he was with someone else so we visited.  They will be living with his parents until November when he will be deployed.  I read on my Kindle for a while.  We had a nice long visit with the missionaries when they got home that evening.  Elder Stanworth asked me if I’d fix waffles for their zone today.  I’m a sucker so said yes.  I then mixed up my sourdough and went to bed. 

We had another cold front come in during the night.  It was lightening and thundering.  We only got a few drops of rain though.  But the wind was really up.  In fact, it knocked out our Internet for most of the day.  I went to breakfast at IHOP with Trish and the rest of the gang.  I stopped at Walmart on the way home for milk then came home, cleaned up the kitchen, and started making waffles as the 22 missionaries got here from all over the zone.  We have a new record—Elder Bues ate 5 ½ waffles.  We thought Elder Fish was going to win.  He only ate 5 and could have eaten more, but we ran out of batter before he was finished.  He said next time…….  Most of the boys usually eat 1-2 waffles.  After they left, I worked on Visiting Teaching.
